Ladies' Delight Pickles (1895)

Isabella Beeton (nee Mayson) was best known for her first book “Mrs. Beeton’s Book of Household Management” published in 1861. The book, also known as “Mrs. Beeton’s Cookery Book”, has been in virtual continual print until the present day. According to the Oxford English Dictionary “by 1861 the term Mrs. Beeton had become used as a generic name for domestic authority.
- 8 ozs. (226.8 gms) of onions
- 8 ozs. (226.8 gms) of apples
- 2 ozs. (56.7 gms) of chillies
- 1 pint (473 mls) white wine vinegar
- 1 tablespoon of salt
- Chop the onions, apples, and chillies, then boil the vinegar and salt and pour it over the ingredients.
- Mix well.
- When quite cold put it into small jars.
- To be eaten with cold meat.
